There's a lot of good fighter in the octagon..not just in the octagon but in mma world.
About what you've said, Vera and CroCop will be a good one but not Quintin Jackson vs. Randy Couture coz Couture is too old. If you've seen Jackson beat the hell out of Iceman Lidell.
For me the best match for Rampage is Kimbo Slice!

yes Randy Couture might be old, but remember he still holds the title for the heavyweight division of UFC! He defeated Tim Silva at UFC 68(03/03/07) and defends it in UFC 74(08/25/07) by TKO to Gabriel Gonzaga!

Brandon Vera vs CC is possible but I don't think the Randy - Rampage fight is possible because of these few reasons

1) Rampage is set to Coach in TUF 7 alongside Forrest Griffin. After that, he's set to defend his title against Forrest Griffin, by that time.. Randy's contract has already expired in the UFC.

2) Randy is fighting at 206 + pounds and cutting weight for his age and facing a younger Rampage in his prime and his natural weight class isn't really that advisable.

3) Randy has some beef in the UFC

4) Randy only wants to fight one person, and that is Fedor Emelianenko.
