Recipe: Beef Stroganoff
Brief explanation: Madaming variation neto, but yung recipe na eto is the simplest way to prepare the said food. Para mas familiar kayo sa recipe na to, sauteed beef in white mushroom sauce ( or plain tomato paste & sauce) w/ sour cream lang sya ( it depends on your cutting size, but i prefer strips)
Ingredients:
• beef sirloin
• button mushroom
• mushroom sauce or tomato paste & sauce
• chopped onion
• roux
• salt
• ground black pepper
• beef broth or beef cubes
Procedure:
• i-gisa sa nonstick skillet or teflon yung beef hanggang sa mag light brown ang kulay nya, alisin at ilagay sa isang medium bowl - palamigin..
• i-gisa ang onion at mushroom sa nonstick skillet or teflon na ginamit sa paggi-gisa ng beef kanina.. i-saute hanggang 4 minutes.. ibuhos ang mushroom sauce or ung alternatibong sauce..
• i-add ang roux at ng beef broth or tubig na may beef cubes at panatilihing naghahalo hanggang sa maging sticky ang sauce..
• add sour cream and simmer for 5 minutes
• salt and pepper to taste..
• serve over hot rice or cooked egg noodles..
Note:
• ang mga salitang may kulay na pula ay mga alternatibo lamang.
• ang mga ingredients lang ang nilagay ko, kayo na bahala sa quantity nyan.. di kayo matuto kung panu mag tantya kung palagi kayong susunod sa mga cookbooks.. experiment kumbaga..

Recipe: Roux
Brief explanation: Roux - sa pagpronounce is "ro".. Yang ang ginagamit pang-thicken ng sauce..
Ingredients:
• unsalted butter
• flour
Procedure:
• sa isang medium heat na kawali, tunawin ang butter hanggang sa maging totally liquidate sya..
• make sure na hinde mashadong mainit ang butter, warm lang ika nga.. (kasi masusunod yung flour at di pantay yung pagkakaluto..)
• i-halo ng dahan dahan ang flour hanggang sa mag-thick sya.. yung parang bagong masa na semento..
• ihalo lang ng mabuti.. (take note: light golden lang yung color nya dapat..)
• after nyan, palamigin muna bago i-store sa ref..
Note:
• actually ang roux, the darker it gets the more flavor ang ma-aadd sa sauce neto.. wag nga lang masosobra sa pagkabrown, kasi papait na sya..
• ang shelf life neto ay aabot ng 1 week..

at talagang maghihirap ka ha. hahaha.
Recipe: Beef Morcon
Brief explanation: Parang embutido lang to kung tutuusin. Kaya lang medyo madami ang kaylangang ingredients neto para mas lalong sumarap..
Ingredients:
For marination
• beef loin ( malapad na manipis ang cutting size)
• calamansi
• soy sauce
• salt and pepper
Ang palaman or fillings
• hard boiled eggs ( sliced)
• sausages or hotdogs
• cheese
• pork fat
• sweet pickles
• carrots
Ang sauce
Note: dalawang klase ang sauce na ginagamit ko dito..
• brown mushroom sauce
• sweet tomato sauce
Brown mushroom sauce
• mushroom
• brown sauce
Sweet tomato sauce
• tomato puree or diced
• sugar
Procedure:
• i-marinate yung beef, calamansi, soy sauce, salat at pepper ng 45 minutes - 1 hour. mas matagal, mas masarap ang kalalabasan..
• after nun, i-arrange ang meat at ilapag ang mga fillings. make sure na equal ang laki from both sides..
• i-roll ang beef kasama yung filling ( yung parang nagrorolyo ka lang ng lumpia or turon).. then secure it with kitchen thread or toothpick..
• after nyan.. ilagay sa isang kaldero kasama nung napili nyong sauce.. simmer it for 45 mins to 1 hour in low fire setting..
• kapag tender na ang beef, hanguin at i-slice sa nagustuhang hugis at i-pour on top ang sauce nya..
Note:
• mas madaling maluto ang beef kung gagamit kayo ng pressure cooker instead of normal na kaldero..
• mas malambot ang beef, mas masarap..
