Ingredients:
• 1 pound medium Shrimp, peeled and deveined
• 1/3 cup Honey
• 1/4 cup Soy Sauce, reduced sodium
• 1 teaspoon Garlic, minced
• 1/4 teaspoon Red Pepper Flakes
• 1 teaspoon Ginger
• 2 tablespoon Walnuts, chopped
• 1 tablespoon Olive Oil
• Green Onions, chopped for garnish
Directions:
1. In a medium bowl, whisk together the honey, soy sauce, red pepper flakes, garlic and ginger.
2. Marinade the shrimp in a container or a zip lock with half of the marinade for 1 hour or overnight.
3. Refrigerate and save the rest of the marinade.
4. In a medium sized skillet, heat the olive oil. Remove shrimp from the marinade and place in the hot skillet, stirring often. Cook the shrimp until it starts to turn pink.
5. Add the walnuts and remaining marinade to the skillet with the shrimp. Cook for about 1 minute more.
6. Serve the shrimp with rice, Thai noodles or ramen (as I did here) sprinkled with green onion and drizzled with the marinade sauce.
