Remember Zoro directly said that if Luffy continues to humiliate himself, then he will be the next to leave the crew.

in usopp's case, usopp disrespected luffy, refused to acknowledge luffy's decision on going merry as the captain, quit the crew, and challenged and fought luffy. luffy was "humiliating" himself with his willingness to take usopp back in without an apology.
but in sanji's case, how is luffy "humiliating" himself? it's not like sanji has control over the situation.

In this case hindi lumaban si Luffy kay Sanji, ginulpi ni Sanji si Luffy intentionally para umalis si Luffy.
Remember nung nag ppraktis si Usopp para mag sorry kay Luffy?
Imagine kapag mag s-sorry na si Sanji kay Luffy?
Patatawarin ni Luffy si Sanji for sure.
Pero nagawa na ni Sanji na saktan si Luffy, every action has a consequence.
No matter kung ano man yung reason, pero kapag sinaktan mo yung captain (in a serious way), diba pagiging disrespectful na yun sa captain?
Tingin nyo palalampasin ni Zoro yun?

^the bigger picture is much more complex and can't simply be summed up like "sanji beating luffy up and luffy not fighting back, therefore sanji is walking all over luffy and luffy is humiliating himself by not fighting back. time for zoro to quit."
i'm pretty sure zoro is mature enough to see the bigger picture instead of thinking in binary codes. your point would be valid only if zoro has a black-and-white mindset... then he would interpret it as luffy humiliating himself.
besides, if luffy fights back for the sake of his pride, i assume they would be less likely to accomplish the goal that they came there for.
