Recipe: Green Beans & Carrots in Oyster Sauce

Brief Explanation: Sauteed beans & carrots in oyster sauce

Ingredients:

• green beans (cut into two)
• carrots (julienned)
• garlic (finely chopped)
• onion (finely chopped)
• olive oil or vegetable oil
• oyster sauce
• pepper
• sugar

Procedure:

• in a pan, heat oil. saute garlic, after ma golden brown isunod ang onion.
• sunod ang carrots at i saute for 3 minutes.
• isunod ang green beans at lutuin for another 3 minutes.
• lagyan ng oyster sauce at pepper.
• lagyan ng konting sugar.
• lutuin ang mga ingredients sa naayon mong pagkaluto. either half-cooked or well cooked.

Notes:

• personally, mas gusto ko yung half cooked sya. kasi mas nalalasap ko yung lasa ng vegetable.
• madaling lutuin at pasok sa budget.

Thanks sir duhast :) any alternative para sa oyster sauce? bawal kasi sila gumamit nun e. pure vegetarian kasi, no meat, fish and other sea foods.
Edit : kung may iba ka pang recipes, paki-add nadin, yong tipong pang-agahan, lunch at dinner meals :D salamat ulit.

Recipe: Vegetable Okoy w/ Garlic vinegar sauce

Brief Explanation: Deep fried mixed vegetables w/ garlicy tangy sauce

Ingredients:

Okoy

• carrots (strips)
• camote (strips)
• squash (strips)
• bell pepper (strips)
• onion (strips)
• malunggay (leaves only)
• all purpose flour
• salt and pepper
• egg
• water
• cooking oil

Sauce

• red cane vinegar (del monte)
• soy sauce (silver swan)
• garlic (minced)
• salt and pepper
• sugar

Procedure:

Okoy

• sa isang lalagyan, i-combine ang egg, all purpose flour, water at salt & pepper.
• sa mixture, ilagay ang lahat ng vege at haluin mabuti. make sure na nahalo itong mabuti before prituhin

• sa isang frying pan, maglagay ng tamang rami ng oil at painitin. medium to low flame only para di agad masunog.
• mag drop ng spoonful na mixture sa mantika at antayin mag golden brown ito.
• pagkaluto, ilagay sa isang plato na may tissue para madrain ang excess oil.

Sauce

• sa isang saucer, haluin lamang lahat ng ingredients.
• timplahan sa naayon na panlasa.

Notes:

• wag mashadong pa-brown-nin ang okoy kasi papait eto. yung tama lang na brown.
• madali lang ito maluto kaya wag mashadong lutuin.
• pwede rin i-sauce ung nabibiling sweet chili sauce sa tindahan.

kung gusto mo talaga ng vegetarian as in ako ang simple lang :

1. get sweat chick peas and brocolli.igisa mo lang sa olive oil, bawang. sibuyas and drizzle with a little soy sauce..low in calorie, low fat, low carb pa
2. you can also get some veggies na naslice na sa supermarket.ako i personally just use lettuce leaves and a few chopped tomatoes and get sardines (yes sardinas, pero mas okay iyong may omega content check mo nalang sa package..okay iyong master sardines na spanish style) at imix mo lang
3. get on smoothies..kuha ka ng selection of fruits mo plus any herbs like cilantro or spinach at iblender mo na siya..no need to add sugar kasi natural naman sweeteners ng mga fruits

Recipe: Crispy Pata / Lechon Kawali

Brief Explanation: Crispy in the outside, juicy in the inside.

Ingredients:

• pata front or pork liempo (pata front dahil madali lang palambutin)
• bay leaves (dried)
• garlic (crushed)
• salt (rock)
• pepper (corn & ground)
• star anise (optional, for aroma)
• garlic powder or aji shio premium pepper (optional, for additional flavor lang eto)
• water (for boiling)
• cooking oil (for frying)

Procedure:

• sa isang kaldero, i-halo sa tubig at pakuluan ang garlic, bay leaves, star anise, pepper corn at pata or liempo ng 1 oras or hanggang sa lumambot ang karne
• pag-lumambot na ito, hanguin at i-drain ng 15 to 30 mins or hanggang sa maging tuyo ang texture neto.
• before prituhin, pahiran ng garlic powder or premium pepper ang outer part ng meat.
• i-deep fry ito sa medium heat na apoy. wisikan ng tubig every time na i-fflip mo yung karne. (maging ma-ingat sa pag-fflip)

Notes:

• pag nag golden brown na ang color neto, i-drain sa pamamagitan ng tissue paper para ma-alis ung excess oil.
• masarap eto paresan ng atsara at pata sauce.

Recipe: Stir-fried Mixed Seafoods

Brief Explanation: stir-fried squid, shrimp, fish in oyster sauce.

Ingredients:

• squid (cut into bite pieces)
• shrimp (peeled or okay lang kahit yung may shell)
• creamdory (nasa sainyu kung anu gusto nyong fish)
• red bell pepper (cubes)
• green bell pepper (cubes)
• onions (cubes)
• spring onions
• garlic (crushed)
• pepper (ground)
• oil
• water
• slurry
• brown sugar
• oyster sauce

Procedure:

• sa isang saute pan, i.saute sa oil ang garlic, onions at bell peppers.
• isunod ang squid, shrimp at creamdory.
• lagyan ng oyster sauce at kaunting tubig.
• pagkakulo, lagyan ng sugar at pepper. lagyan ng slurry at iayon sa gustong consistency ng sauce.
• ilagay ang spring onions at patayin ang apoy.

Notes:

• masarap kainin ito kapag mainit.
• make sure na hinde nyo i-oovercook ang seafoods.

Recipe: Pork Barbecue

Brief Explanation: Tipikal na barbecue na makakain nyo.

Ingredients:

• pork belly (para sa first na itutuhog)
• pork cas-ing (ang second to belly para ma kumpleto na ang bbq)
• calamansi juice
• crushed garlic
• bay leaf
• soy sauce
• vinegar
• brown sugar
• ground black pepper
• tocino mix (optional eto, nasa sayo na kung gagamit ka neto)

Utensils:

• stainless bowl or kahit anong lalagyan (w/ cover) para sa marination
• barbecue stick (magdedepende ug laki ng stick sa laki at dami ng ilalagay nyo na meat)
• knife at chopping board

Procedure:

• hiwain ang pork belly inyo 1 to 2 inch or any slice na gusto nyo na pang barbecue, pagkatapos hiwain i-set aside
• isunod ang pork cas-ing. halos same lang ang hiwa sa belly, isama sa belly at i-set aside rin
• sa isang bowl, ilagay ang soy sauce - vinegar - calamansi juice - brown sugar - pepper - crushed garlic - bay leaf - tocino mix. haluin mabuti
• ilagay ang belly at ang cas-ing at haluin evenly
• i-marinate overnight before tuhugin sa stick.

Notes:

• using tocino mix will make the barbecue more sweeter and tangy
• you can also use orange juice powder mix insted of tocino mix

Recipe: Barbecued Smoked Baby Back Ribs

Brief Explanation: Tipikal na barbecued baby back ribs na mura.

Ingredients:

• pork ribs (baby back ribs / whole slab)

Rub:
• hickory smoked seasoning mix (grill mates - mccormick)
• paprika or chilli flakes (kung gusto nyo medyo spicy - optional)
• brown sugar
• garlic cloves (crushed and minced)
• rock salt
• ground black pepper

Sauce:
• pineapple juice
• tomato catsup
• coke (tama pagkakabasa nyo, coke nga)
• soy sauce (konti lang - for coloring)
• water

Utensils:

• stainless bowl or kahit anong lalagyan and sauce pan
• griller or ihawan and uling
• fork, food tong, knife at chopping board

Procedure:
• linisin ang pork ribs then make sure na moist eto. hinde basa, hinde rin tuyo - pero moist. then set aside.
• ihalo ang lahat ng ingredients sa para rub then ipahid ito evenly sa pork ribs.
• ihawin ito sa mahinang apoy or init (wag mashadong punuin ng uling, katamtaman lamang. pag madali na maubos, punan ng konti) lamang hanggang sa maluto. usually it takes hours before maluto, depende sa ganu ka malaman ito.
• while nag-iihaw ka, every 30 mins - iflip mo hanggang sa magkulay light brown ito.
• habang nagiihaw ka, sa isang sauce pan. ihalo mo lahat ng ingredients ng para sa sauce. initin ito medium to low fire and pag lumapot na, patayin nyo na ang apoy.
• pag nag light brown na ang color ng meat, pahiran ito ng sauce. wag uubusin - magtira para sa finishing touches.
• tusukin ng fork para malaman kung luto na ito or hindi pa.

Notes:

• cook it using medium to low heat lang para di masunog ang meat.
• personally, i don't really boil ribs kapag nagbbq kasi andun sa tubig yung flavors nya eh. kung me oven kau mas maganda. you can pre-broil your meat then put it in the oven for 45 mins.
• ang daming version ng pagluluto ng baby back ribs, pero sa lahat ng version ko - eto yung pinakamadali. :)

hi chef. kelangan ko po yung tulong mo tungkol sa mga recipe ng lutong bahay. bigyan mo po ako ng mga pinoy recipe. unang linggo ko po ng umpisa ng pgluluto sa mga opisina. my oorder tapos dideliver ko po sa knila. tsak yung costing din po. P60.00 po kasi presyo ko. parang budget meal xa. my kain, main dessert at gulay. cebu area po ako. tingin ko po kunti lng profit ko. maraming salamat po chef.
