Ah eh, about sa color ng pan cake - food coloring lang yan. Egg yellow (Neco food) lang ang need mo. And about sa consistency sa mixing mo yan, the more na sticky ang mix mo the more ito na makunat. As well as kung malabnaw eto, soft ang consistency nya. And smooth ang texture.

Recipe: Gambas Al Ajillo

Brief explanation: Shrimp, chili, garlic with sweet and spicy sauce

Ingredients:

• shrimp (deveined)
• chopped garlic
• sili espada (chopped)
• calamansi juice
• salt & pepper
• sweet chili sauce
• corn oil
• water
• slurry (cornstarch and water mixture)
• olive oil (optional)
• fried garlic bits (optional)
• parsley (optional)

Procedure:

• sa isang bowl, i.marinate ang shrimp, calamansi juice at salt & pepper for 10 mins.
• sa isang saute pan, i-saute sa corn oil ang garlic in medium flame hanggang sa mag brown ito.
• isunod ang sili espada, then ang minarinate na shrimp. (isama yung pinagmarinate.an neto)
• pagluto na yung shrimp, ilagay yung sweet chili sauce at kaunting tubig. (i-ayon sa panlasa)
• pakuluin ng kaunti, tapos ilagay ang slurry. (para maging malapot yung sauce. wag mashadong damihan para hinde maging thick ang consistency ng sauce)
• after makuha yung gustong consistency ng sauce, patayin ang apoy. lagyan ng ng 1 tbsp na olive oil isunod ang fried garlic bits at parsley.

Notes:

• madali maluto ang shrimp, pag nag-change na yung color into pink it means luto na ito.
• wag nyong i-over cook ang shrimp kasi kukunat eto.
• ang olive oil, fried garlic bits and parsley ay pang presentation lamang. it will make the food more appetizing.

Recipe: Balbacua

Brief Explanation: composition of ox tail, skin and meat in peanut and black bean soup

Ingredients:

• ox tail
• ox skin (optional)
• beef meat (yung pang pochero - beef shanks to be specific)
• black beans (drain and rinse)
• red onion bulb (cut into quartered or cubes)
• spring onions (cut into half inch)
• salt and pepper
• ginger (flat sheet)
• raw peanuts (yung puti)
• peanut butter (optional)
• atsuete oil (saute atsuete seeds in corn oil - i-drain mo. get the oil)

Procedure:

• i-boil ang ox tail at skin sa tubig, salt and pepper for 20 mins and drain after. (ang purpose neto is para mawala yung langsa ng meat)
• i-boil ulit ang ox tail at ang skin sa tubig at ginger for 1 to 2 hours or until sa maging tender eto.
• remove the ginger.
• isunod ang beef meat and raw peanut and continue boil it for 2 hours under low heat.
• pag malambot na lahat ng meat, i-add ang onions, black beans and atsuete oil.
• cook it for 1 hour. after nun, ilagay ang peanut butter. (para lumabas ang "nutty" flavor)
• pag ready na at nakuha na yung gustong timpla and consistency, i.lagay ang spring onions.

Notes:

• mas masarap ito kung napaka-lambot ng mga meat neto.
• don't forget to remove the foamy like thing kapag nagpapakulo ng meat.
• matagal ang pagprocess neto, it usually takes half to whole day ang processing pero it is worth naman.
• ang atsuete oil ay pampa-color lamang, it will give the food a close to red or orange color. it depends kung ganu karami ilalagay nyo.

Recipe: Parmesan Tuna Filling for Sandwiches (Cold Sandwich)

Brief Explanation: Parmesan, bell peppers, onions and tuna fillings

Ingredients:

• tuna in brine (chunks, drained)
• red bell pepper (chopped)
• green onions (thinly sliced)
• parmesan cheese (shredded)
• mayonnaise (lady's choice or best mayo)
• sour cream (optional)
• dijon mustard (optional)
• lemon juice
• dried basil leaves (mccormick, optional)
• pepper (ground)

Procedure:

• i.halo ang tuna, bell pepper, and green onions sa isang medium bowl. i.set aside.
• sa isang small bowl, i.halo ang cheese, mayonnaise, sour cream, mustard, lemon juice, and basil leaves at haluin ng mabuti.
• i.dagdag ang tuna sa mixture and blend. pag nakuha na yung inaasam na lasa, i-refrigerate eto.

Notes:

• tumatagal eto hanggang 2 - 3 days pero depende sa pagkaka-food keep ng filling.
• pwede rin eto i-fill sa pita bread or wraps.

Recipe: Lemon Butter Sauce

Brief Explanation: buttery sauce w/ sting of lemon.

Ingredients:

• oil
• butter (unsalted)
• minced garlic (minced)
• lemon juice (galing sa american lemon, wag itapon ang lemon skin)
• liquid seasoning (knorr)
• parsley (chopped)
• salt and pepper

Procedure:

• initin ang oil and melt butter sa isang small saucepan.
• idagdag ang garlic and i.sauté hanggang sa bumango ang garlic.
• patayin ang apoy at idagdag ang lemon juice (kasama ung skin), liquid seasoning, and parsley.
• haluin mabuti at i.adjust ang seasoning with salt and pepper ayon sa panlasa.

Notes:

• before mo gamitin, initin mo muna para lumabas ang natural na aroma at flavor ng lemon.
• good for pan-fried and grilled items.

Brief Explanation: a blend of sweetness and sourness.

Ingredients:

• pineapple juice
• water
• vinegar
• soy sauce
• brown sugar
• cornstarch (slurry)

Procedure:

• i.combine lahat ng ingredients except sa slurry sa isang sauce pan in a medium heat.
• pag kumulo eto, ilagay ang slurry at haluin constantly.
• pag naging sticky na yung consistency ng sauce, patayin ang apoy.

Notes:

• good for fried items such as pork and chicken.

Recipe: Teriyaki Sauce

Brief Explanation: sweet and tangy sauce.

Ingredients:

• japanese sweet rice wine
• soy sauce
• brown sugar
• rice vinegar
• sesame oil
• garlic (minced)
• black pepper (ground)
• red pepper flakes (optional)

Procedure:

• sa isang sauce pan, ilagay ang japanese sweet rice wine at pakuluin ito in a medium heat for 10 to 12 minutes.
• isunod ang soy sauce, sugar, rice vinegar at sesame oil. haluin mabuti.
• ilagay ang garlic at ground pepper at simmer for 5 minutes (kung gusto nyo ng medyo spicy, lagyan ng red pepper flakes)
• pagkakulo, patayin ang apoy at i-set aside.
• takpan ng mabuti, at palamigin.

Notes:

• good for steamed items such as fish and shrimp.

masarap naman yan lahat, depende lang talaga yan kung san mo sila ibabagay. like for example, pan-fried tangigue w/ lemon butter sauce or grilled chicken in teriyaki sauce. :3

Recipe: Stir-fried Mixed Seafoods

Brief Explanation: stir-fried squid, shrimp, fish in oyster sauce.

Ingredients:

• squid (cut into bite pieces)
• shrimp (peeled or okay lang kahit yung may shell)
• creamdory (nasa sainyu kung anu gusto nyong fish)
• red bell pepper (cubes)
• green bell pepper (cubes)
• onions (cubes)
• spring onions
• garlic (crushed)
• pepper (ground)
• oil
• water
• slurry
• brown sugar
• oyster sauce

Procedure:

• sa isang saute pan, i.saute sa oil ang garlic, onions at bell peppers.
• isunod ang squid, shrimp at creamdory.
• lagyan ng oyster sauce at kaunting tubig.
• pagkakulo, lagyan ng sugar at pepper. lagyan ng slurry at iayon sa gustong consistency ng sauce.
• ilagay ang spring onions at patayin ang apoy.

Notes:

• masarap kainin ito kapag mainit.
• make sure na hinde nyo i-oovercook ang seafoods.
