Recipe: Gambas Al Ajillo
Brief explanation: Shrimp, chili, garlic with sweet and spicy sauce
Ingredients:
• shrimp (deveined)
• chopped garlic
• sili espada (chopped)
• calamansi juice
• salt & pepper
• sweet chili sauce
• corn oil
• water
• slurry (cornstarch and water mixture)
• olive oil (optional)
• fried garlic bits (optional)
• parsley (optional)
Procedure:
• sa isang bowl, i.marinate ang shrimp, calamansi juice at salt & pepper for 10 mins.
• sa isang saute pan, i-saute sa corn oil ang garlic in medium flame hanggang sa mag brown ito.
• isunod ang sili espada, then ang minarinate na shrimp. (isama yung pinagmarinate.an neto)
• pagluto na yung shrimp, ilagay yung sweet chili sauce at kaunting tubig. (i-ayon sa panlasa)
• pakuluin ng kaunti, tapos ilagay ang slurry. (para maging malapot yung sauce. wag mashadong damihan para hinde maging thick ang consistency ng sauce)
• after makuha yung gustong consistency ng sauce, patayin ang apoy. lagyan ng ng 1 tbsp na olive oil isunod ang fried garlic bits at parsley.
Notes:
• madali maluto ang shrimp, pag nag-change na yung color into pink it means luto na ito.
• wag nyong i-over cook ang shrimp kasi kukunat eto.
• ang olive oil, fried garlic bits and parsley ay pang presentation lamang. it will make the food more appetizing.

Recipe: Lemon Butter Sauce
Brief Explanation: buttery sauce w/ sting of lemon.
Ingredients:
• oil
• butter (unsalted)
• minced garlic (minced)
• lemon juice (galing sa american lemon, wag itapon ang lemon skin)
• liquid seasoning (knorr)
• parsley (chopped)
• salt and pepper
Procedure:
• initin ang oil and melt butter sa isang small saucepan.
• idagdag ang garlic and i.sauté hanggang sa bumango ang garlic.
• patayin ang apoy at idagdag ang lemon juice (kasama ung skin), liquid seasoning, and parsley.
• haluin mabuti at i.adjust ang seasoning with salt and pepper ayon sa panlasa.
Notes:
• before mo gamitin, initin mo muna para lumabas ang natural na aroma at flavor ng lemon.
• good for pan-fried and grilled items.

Recipe: Sweet and Sour Sauce
Brief Explanation: a blend of sweetness and sourness.
Ingredients:
• pineapple juice
• water
• vinegar
• soy sauce
• brown sugar
• cornstarch (slurry)
Procedure:
• i.combine lahat ng ingredients except sa slurry sa isang sauce pan in a medium heat.
• pag kumulo eto, ilagay ang slurry at haluin constantly.
• pag naging sticky na yung consistency ng sauce, patayin ang apoy.
Notes:
• good for fried items such as pork and chicken.

Recipe: Teriyaki Sauce
Brief Explanation: sweet and tangy sauce.
Ingredients:
• japanese sweet rice wine
• soy sauce
• brown sugar
• rice vinegar
• sesame oil
• garlic (minced)
• black pepper (ground)
• red pepper flakes (optional)
Procedure:
• sa isang sauce pan, ilagay ang japanese sweet rice wine at pakuluin ito in a medium heat for 10 to 12 minutes.
• isunod ang soy sauce, sugar, rice vinegar at sesame oil. haluin mabuti.
• ilagay ang garlic at ground pepper at simmer for 5 minutes (kung gusto nyo ng medyo spicy, lagyan ng red pepper flakes)
• pagkakulo, patayin ang apoy at i-set aside.
• takpan ng mabuti, at palamigin.
