Early on Titan, they spotted Dr. Strange simulating all potential outcomes in his mind, tens of thousands of potential outcomes, and he said there’s a single one which leads to Victory.
He early said to Iron-man “If I had to choose between you two and an entire universe, then I won’t hesitate” This means he CERTAINLY did not sacrifice the time stone for their sake, as soon as he lost it, he said: “It was the only way”
I’m not a follower of comics, in fact I never read them, I just watched the movies, so whatever I speculate will be purely from my own perspective.
I’d say perhaps it’s “Flash” he’s the only one (the I know) who can manipulate time, and what would the key moment which started all this? it’s the moment when the guy (Peter Dinklage, forgot the character’s name) forged the Gauntlet that could harness the power of all stones, and prevent him from doing it.
On that point, it might become a moment of tension, it might be the key moment to show a good side of Thanos, a conflict will arise: Doing the right thing vs doing what you think is right, One thing is 90% possible: Thanos will die.
As for the Hulk, the only logical explanation is that he’s refusing to show because he wants his buddy to hook up with Black Widow, and he know that as long as he’s around, it could be a risk, so he decided to go in hiding and never show up again.
